The traditional either/or for Thanksgiving has been mashed potatoes or stuffing. Maybe that’s just from my childhood. Seems both were always present. Mashed potatoes vs sweet potatoes? Also, both present. Scalloped and au gratin also have taken a turn on the Thanksgiving spread, but somehow, having lived both in Missouri and Illinois – and celebrated the holiday in other states too, I’ve never partaken of this potato dish, or the Thanksgiving twist.

Potato skins. They have been an appetizer on menus for decades. Some people even have their own potato skin recipe that they break out for parties like the Super Bowl or New Year’s. Thanksgiving potato skins? On the table next to the turkey, the stuffing, the cranberry sauce,  -- while having all those things riding within the skin? Yup, it’s a thing.

Thanksgiving potato skins as a special leftover treat? I get it. A fun way to experience the flavors of turkey day in an appetizer? Give me a half dozen, now! On the buffet next to all the other sides and turkey? Seems kind of like mocking the Thanksgiving stalwarts. The implication being, “You don’t need a plate of all that other stuff. You can have all of it, by just having me.”

While Thanksgiving potato skins may be delicious. If you have extra potatoes after Thanksgiving, that’s when I would serve up the leftover turkey day potato skins. If you want to create a “situation” on Thanksgiving, turkey day potato skins is a way to do it. They will be remembered. You do you.
