The pizzelle is a thin waffle cookie that gets served traditionally at celebrations. You can serve them gooey and warm right off the pizzelle iron, let them cool and they will crisp up. Or—when they are still warm roll them to use as cannoli shells.

Pizzelle irons come in a variety of sizes and styles

A pizzelle iron is essential to making these treats. Whether that's a new model that usually is smaller than older models, and may only be able to make one at a time. Or-- one of those old classic iron double sided models, choice of iron is important.

Flavoring varies from the time-honored anise extract to the more modern vanilla extract, or lemon zest. Some sprinkle cinnamon or powdered sugar over them. Others include chocolate or pumpkin in the batter. While decorating pizzelles includes a chocolate ganache dip (with or without sprinkles of chopped nuts or candies). You can serve them plain, with jelly or jam, or with ice cream in the middle. Perfect for an after school treat, or a dessert option, pizzelles are worth researching for your family and events.
