Now that Christmas cookie season is over and you are scrounging at the bottom of the cookie tin, allow me to point you in the direction of a traditional Italian cookie that you can dress up in many ways. The pizzelle is a thin waffle cookie that gets served traditionally at celebrations. You can serve them gooey and warm right off the pizzelle iron, let them cool and they will crisp up. Or—when they are still warm roll them to use as cannoli shells.
