Today make a note of seeking out Ozark Redbud Jelly. In Missouri the Redbud’s start blossoming in March. Those flowers are full of flavor and the resourceful people of the Ozarks have a tradition of turning those bright pink early signs of spring into delicious jellies and jams.

One quart of Redbud blossoms can be turned into a pint and half of jelly pretty quickly. The process isn’t to terribly complicated, but, like most culinary undertakings, patience and timing are to be utilized.

Redbud Jelly is bright pink (like the blossoms) in color and people describe it as tasting light and sweet with floral hints (obviously), and subtle grape or strawberry flavors. Others taste cotton candy.
