If you have lived in, or been visiting Quincy Illinois when a new restaurant opens up you know how residents will line up to get a taste of the new place on day one. Many times, causing traffic back ups near the new establishment. Quincy restaurant consumers tend to put a new joint in a severe first week stress test.

Local consumers also have a soft spot for a few restaurants that aren’t in town/or even in the area. These traditionally include Red Lobster and Olive Garden. There are also restaurants that I think would be very successful locally that aren’t in the area like Cracker Barrel or Chick-fil-a. Throw in the nostalgia angle of restaurants that are gone from the area that consumers might very well line up for again (Sandy's, Talayna's, Imo's Pizza) – even if just for a weekend. Which brings me to the whole point: Pop-Up Restaurants.

Pop-up restaurants open in temporary locations for a short window of time to give people a chance to partake in something new. That may be a new idea from an established brand, or an entire new thing altogether.

Based on Quincy restaurant consumers' patterns of eating, pop-up restaurants would lean into locals' desire to be the first to try the new flavor without a long term commitment to making it a regular go-to. This would also be a chance to test the market for interest. Franchises will traditionally have population levels that need to be achieved before talk of placement can even begin. A Pop-Up restaurant would give the company a chance to “try on” the market without committing the brand to the area.
