You have to eat Imo’s Pizza, try toasted ravioli, enjoy gooey butter cake, and, of course, experience authentic Missouri BBQ. But when it comes to barbecue ribs in Missouri, there’s one rule that might surprise you.

According to Ranker, which compiled a list of official food “rules” for every state, Missouri BBQ ribs should be grilled, not smoked. The rule suggests ribs be cooked on the grill, then generously sauced and coated with that signature sweet-and-smoky Missouri-style BBQ sauce.

That’s a bold statement in a state known for its barbecue culture.

Missouri barbecue is serious business, especially with Kansas City-style BBQ influencing much of the state’s flavor profile. Thick, rich sauces, slow-cooked meats, and fall-off-the-bone tenderness are staples of Missouri BBQ.

But the grilling vs. smoking debate continues to spark conversation among BBQ lovers.
